It has been pretty hot here the past few days, the kind of hot where you definitely can’t go to the park and even the pool is questionable during peak sun hours. So, we have been laying low, spending our time in air-conditioned bliss. The downside is trying to occupy that time without involving anything with a screen.
On Monday, we played “hide-and-sneak” {as Miss L calls it}, rolled the ball to each other, played smash ball {Mr L just watched, obviously}, did crafts {cut magazine pages and glued them onto construction paper, that’s a craft, right?}, and played with instruments…ALL. BEFORE. 11AM. That morning, we also took a bunch of ripe bananas, peeled them and stuck them in the freezer to use the next day.
So on Tuesday my little helpers and I embarked on making our special treat. This ice cream nice cream is so yummy; you {and the littles} would never know that it is simply frozen fruit! It was also the perfect way to let my son celebrate his 9 month birthday!
Here is what we used:
For the nice cream
6 bananas {peeled and frozen for 24 hours}
1 bag of frozen cherries
1 bag of frozen blueberries
Yonanas machine {some people use a food processor, I haven’t tried so not sure about the consistency} I have seen them at Costco. You can also purchase here.
For the coconut whipped cream
1 can of coconut cream {I like to refrigerate mine}*
1/3 cup of creamed honey {optional}*
*You can pick up both of these at Trader Joe’s
Feed through each fruit grouping separately, or alternate if you want to swirl the flavors. It helps to let the bananas thaw for 10 minutes or so. {that cute little hand of my helper, she was eager to help}
Using a hand mixer, beat the coconut cream and honey in a medium sized bowl until fluffy.
Serve and enjoy over and over again all summer long! I had to repeat that layered pic…so pretty.
