It is that time of year where it’s easy to pile on the calories and preservatives all in the name of convenience. This meal is my go-to when I have a busy day or week ahead.
It takes less than 30 minutes, requires few ingredients and can be served in a multitude of ways. All you need to remember to do is turn on the crockpot (I have forgotten once…ok maybe more than once).
Here’s what you need:
- Crockpot/slow cooker
- 4 organic chicken breasts (rinsed and pat dry)
- 30 oz salsa (from the deli…look for one without added preservatives or sugar) usually two 15 oz containers.
- Optional: 16 oz organic chicken stock
Put the chicken at the bottom of the crockpot and toss in the salsa and chicken stock to cover. Cook on high for 3-4 hours, low for 7-8 hours (check your slow cooker settings for best results).
That’s it! Season it to taste. You can serve with steamed or roasted veggies…or toss them in tortillas and make tacos. I put mine on a bed of arugula and top it off with my FAVORITE guac-kale-mole from Whole Foods. I have to buy the little containers so it isn’t too bad if I eat the whole thing in one sitting.

P.S. I have been using my fine china for our dinners lately. Mostly because I can count on one hand how many times I have used it. Also because after feeding the kids breakfast and lunch and then just eating a few bites here and there (because whenever I sit down I hear, “Mom, I wanted string cheese with this” or “Mom, I need more water” or “Mom, I want what you are having”) I deserve a fancier meal 😉
P.P.S. The chicken would be a million times better if I made my own salsa. But that would put me over 30 minutes and in line for pizza.
