With summer just around the corner, there will be plenty of excuses to make Margarita Popsicles. I recommend experimenting as much as you can now to get the process down {wink, wink}.
I came across these lovelies on Host the Toast, a fantastic blog with some of the most mouth-watering food and drink recipes…do not browse if you are hungry {you have been warned!}.
Anyways, I follow her recipe pretty closely…I mostly omit the orange juice and up the tequila. Seems like a fair trade to me.
Ingredients
- 1¼ cups lime juice {approx. 10 small limes}, plus 6 limes sliced into ¼ inch rounds to hold up the pops
- 1 (14oz) can of sweetened condensed milk
- 1 cup water
- 1/2 cup tequila
- Salt {for putting around the rim of the lime}
Tools you will need:
- 12 (3oz) Dixie cups
- Small popsicle sticks or craft spoons
- A pitcher
DIRECTIONS
- In a pitcher, combine the liquid ingredients {lime juice, condensed milk, water and tequila}
- Line up Dixie cups on baking sheet in freezer to keep transferring easy {transferring without spilling is the hardest part}. Pour mixture into Dixie cup so that 90% full.
- Push a craft spoon halfway through the center of each sliced lime round. Top the mixture in each cup with a lime stick. Make sure the lime is resting directly on top of the tequila mixture to minimize gaps.
- Freeze for at least 6 hours, or overnight. When ready to remove the popsicles from the Dixie cups, tear from the rim and peel them away from the popsicles. Place the popsicles onto a dish with crushed ice to keep them from melting too quickly, Sprinkle with salt, and enjoy.
